How to (successfully) take a photo of the night sky?

Hello,

I have been dreaming for a long time of taking a photo of a starry night. However, I've been totally unsuccessful! I have tried all kinds of settings on my camera, as well as a tripod with different lengths of exposure times, I went outside of town to avoid the light pollution of the city, etc... But each time, it fails. The sky is totally black, with a big totally white spot as the moon, or, with longer exposure time, it looks like as it was the day light, the sky is all blue, without any stars visible. So I am wondering how to obtain a photo, which looks like what I see with my own eyes? Is it possible to accomplish it with "normal" cameras? Or does it require professional cameras, or special lens/filters?

Without making a pun, if anyone could enlighten me, I would be greatly appreciative.
